So why does the doctor ask you to not wear a cap or helmet? The cap or helmet may cause increased friction or pressure on the grafted areas.

You will have to wait for at least 7-10 days after the surgery before you can start wearing a cap. And you will have to wait for a minimum of 2 to 3 weeks before you can start wearing a helmet. But keep in mind that if you feel any pressure, rubbing or any kind of irritation, you should immediately pull out the helmet or cap.
It will be better if you wear a loose cap. A tight cap may cause the hair follicles to stick on to the cap and cause unnecessary harm and the risk of the scalp getting infected may also rise. If you want to wear a hat, try wearing it for less time.
If it is necessary for you to wear a cap or helmet, first cover your scalp with a bandanna or a cloth and then wear the cap or helmet over that. This will reduce the friction between the helmet and the scalp. Basically you have to make sure that there is low or no pressure on the grafts on the Scalp.
